I was just having a look at the USA Foods website, for the first time actually. I was having a browse and thinking there wasn't really that much I missed, the only thing I REALLY needed from the US was my Old Bay seasoning. Then .... HORROR!
http://www.usafoods.com.au/p4082/sauces-spice-seasoning/old-bay-seasoning--click-read-description/ Apparently this is a new thing because they use to sell it and I have bought mine locally in Hobart before. I might have to run down and see if they have any left and stock up!! |

Old Bay is a seasoning that is common for seafood. It comes in a powder or a liquid form. It's used a lot for crab boils and crabcakes in my house, but I believe you can use it with other things too. |

Oh my! Is there any way to find out what the full list of ingredients is, and substitute if necessary? I love Old Bay Seasoning, but I haven't used it much here since I'm not much of a seafood cook -- I tend to have shellfish when we go out, but not at home. |

Funny how they work...I just got a package from my mom and inside were three boxes of Hidden Valley Ranch packets! Must depend on the day and worker as to what gets through! |

I just wrote about Old Bay and Lawry's seasoned salt on Pamm's big thread. Lawry's is available at USA Foods for about A$4.00 for an 8 oz. jar. I live not too far from their retail store and I buy it in person. It is a staple in my kitchen. Old Bay tasts like it has ground celery seed as one of its ingredients. It is funny how customs would ban this and other American foods and yet they let in very many spices and foods from India and Asia. |

There's heaps of copycat recipes for Old Bay, if you google it. And you're right, Jed, first ingredient on the can is celery salt (salt, celery seed). Then, spices (including red pepper and black pepper), and paprika. Nothing as whole seed or anything, so it's just weird Quarantine would stop allowing it. Here's one using all ground spices: 2 tablespoons bay leaf powder 2 tablespoons celery salt 1 tablespoon dry mustard 2 teaspoons ground black pepper 2 teaspoons ground ginger 2 teaspoons sweet paprika (smoked paprika is even better if you can find it!) 1 teaspoon white pepper 1 teaspoon ground nutmeg 1 teaspoon ground cloves 1 teaspoon ground allspice 1/2 teaspoon crushed red pepper flakes 1/2 teaspoon ground mace 1/2 teaspoon ground cardamom 1/4 teaspoon ground cinnamon And another, where you grind stuff up together, though no red pepper, so, not as authentic: * 1 tablespoon Celery Seed * 1 tablespoon Black Peppercorns * 6 Bay Leaves * 1/2 teaspoon Whole Cardamom * 1/2 teaspoon Mustard Seed * 4 Whole Cloves * 1 teaspoon Sweet Hungarian Paprika * 1/4 teaspoon Mace And those are the extremes from most to least ingredients, there's many more. |

TOTALLY funny how it works - so random - as I included 3 tins of Old Bay in our shipment in our container ... and they made it, along with all the other spices & food we packed I sprinkle it on popcorn, along with nutritional yeast (what they call "Savoury Yeast Flakes" here). |

According to the USA foods site it looks like a new thing, I bought Old Bay from a shop here a few years ago no problems. |

This may be irrelevant now but it hasn't been mentioned on this thread so here goes: Our very own Ian 'Herbie' Hemphill runs a herb and spice business in Rozelle, Sydney, and makes a Bay Seasoning based on the recipe for Old Bay. It can be purchased online at: http://www.gourmetshopper.com.au/shop/product.php?productid=91&cat=0&page=1 I found the Yanks Down Under site while looking for Old Bay for an Ina Garten (Barefoot Contessa) recipe for salmon cakes. Herbie's catalogue can be found at http://www.gourmetshopper.com.au/shop/home.php?cat=1 Hope this helps! Edited by houndstooth, May 2 2011, 10:29:27 AM.

My mom sent me a package once with Tootsie pops in it and when I got it the bag of Tootsie pops was open and a few were taken out. I guess customs were curious and wanted to taste...

They don't taste them - they 'test' them! My packets of macaroni and cheese mix are often opened and tested Plus my packages with my boxes of Mike and Ike's always gets opened as well. I guess those little buggers look like drugs.

I actually make Large batches of this stuff on a regular basis. I did before i moved here because i always liked mine a bit more peppery. I also make Adobo and Sazon... ( I am hispanic ) a few things i learned how to make out of necessity like Sofrito. But old bay is really easy to make but get a coffee grinder. Dont get a spice one they seem to cost more for no reason and pulse the lot through and use whole bay leaves. |

I guess I've been lucky too...my Old Bay and Ranch dressing packs haven't ever been confiscated by customs, even when I've declared them at customs in the airport! |
