Jasper, I get Colby in Woolies, IGA, and Coles, as Tors said it's right by the Tasty cheese. We usually get it in blocks, since it's a good snack for me, being diabetic.

...now if I could just find a cheese slicer... :rollin:

They used to sell something called "Aussie Jack" in the fancy-shmancy cheese section at our local Woolies. Other American expats claimed that it tasted just like Monterrey Jack. It may still be available, I haven't looked for it in a long time.

Jasper, I usually find colby cheese right near the Tasty cheese. :)
Right on I will give it another go. I have an eyeball for stuff in the cheese section I am used to Coon, Bega, Home Brand, and one more that I cant remember. If you ever get a brand could you let me know? I would e-mail the manufacturer to find out where they sell it. I am out in the bush so that might be why.

mainland cheese has colby... its in an orange wrap. you should be able to find it in the cheese section of your local coles, woolies or independent grocer.

There's colby cheese in most stores here in Perth, and I'm sure I saw it in Dubbo, so Tamworth should have it.

Another possibilty, jasper, is to make your own "Monterey Jack."
It's a very simple, basic, fresh cheese, and there's quite a few recipes on the internet for it.
Minx has a home-cheesemaking-friend that has made several batches, at her request, and it's excellent! :lurve:
I've made some awesome cheeses as well, it's not too difficult, just follow directions. :goodonya:

ain't THAT the truth! One of those simple things that make you wonder...
I'll have a look here in town, Pamm, I've just been making-do with various knifes :headscratch:

eta: There's gotta be one... IKEA has a $2 three-way egg-slicer!

Really, you'd think there would be simple cheese slicers here *somewhere*! I'll have to look in Target and K-Mart next time we're out that way. Or just have Mom send one in the next care package! :rollin:

What kind of slicer? I bought one of those roller ones with the wire at Howards Storage World, but I have seen them at Big W, etc. For just eating cheese with wine we have a cheese board and cheese knife for that:)

The roller with a wire, Greg :) It truly just occured to me recently, haven't looked in Target or K-Mart yet, one of them *has* to have it! Or maybe the Thumbs Up. I found my veggie steamer baskets there. Believe it or not, I couldn't find *one* of those till I found one in K-Mart, then they started popping up all over the place!

oh hey, Pamm, there's a Howard's Storage World like Greg said, right here @ Karrinyup, I've never been in there as I was holding a grudge, they replaced the Australian Geographic store. :( Won't have time in the mornin to check before Mum's post-op appt, but I'll get there VERY soon! 8)

the first time i went to aus i thought it so odd that all the cheese was white. i grew up in a household of lots of yellow/orange cheese and thus thought that was the natural color of most cheeses. after living in aus i realized that many cheeses in the US are colored with annato, an orangish pigment derived from carrots. why the hell americans decided to color (oh, sorry, colour) their cheese i dont know and ever since i've try to stay away from the artificially coloured cheeses in the US.

velveety, cheese whiz, and what americans call 'american cheese' is processed food stuff. they take cheese and thrown in emulsifiers that give it that unnatural texture. i say its about the lowest form of cheese there is. why screw with cheese like that?

The colour of cheese here blew my mind too. I believe that some exports weren't allowed into other countries from the U.S. because of irradiation of food, genetic engineering of fruit, hormones going into cattle to make them bigger, and I heard rumours about what KFC was doing to chickens. However I think that Velveeta falls within the Frankenfood category! ARRGGHHHH BRAINS!!!
