Today I made Mexican food, so glad I opted for packing those spices! Made Tortillas from scratch then folded them into quesadillas with some tasty cheese, chicken, onions and peppers roasted corn and black beans (i found the beans at Queen Victoria Market!) My fiance was wondering how long he would have to drool smelling it until we actually got to eat it! It was wonderful and I have leftovers! mmmm! |

That Mexican meal sounds excellent, especially the homemade tortillas! I just got back from the Taste of Tasmania festival, and while there's a lot of seafood on offer I had to stop by an Ethiopian stall. (We can always just hunt for oysters down on the peninsula. ) Lentil stew and sponge bread, nom! Then I followed it up with a mixed berry platter and a local pear cider. The food here is really something special in summer.

I've been to the Taste of Tasmania and its a lot of fun and very yummy! We had sausages and I made homemade coleslaw. I always put some of the coleslaw in the bread with the sausage - hubby calls it 'Americanizing' an Aussie classic... I say "yummy" ![]() |

My sweetie just came home with pork mince and Pampas puff pastry, I guess he wants homemade sausage rolls! He think's Tinkerbell-style sausage rolls out of my Jimmy Dean-type sausage mixture beat Aussie-style sausage rolls any day, and he ate lots of sausage rolls before I married him!

i have homemade pizza in the oven! I made my own crust with fresh garlic in it, I have opened the windows and doors since its hot inside, so maybe someone walking their dog would like to sample some pizza. mmmmm. |

I made enchiladas for lunch yesterday and they were a huge hit. The homemade sauce and homemade tortillas were the key--I seriously can't justify the prices of store bought tortillas, I have time but not money and I figure rolling them all out by hand will actually burn off the carbs I am about to eat-ha! Here is the Recipe for the Sauce. o 1 garlic cloves, minced o 1 medium onions, chopped o 1/2 cup green peppers, slivered o 2 tablespoons oil o 1 1/2 teaspoons chili powder o 1 (28 ounce) cans tomatoes, crushed o 1/2 teaspoon oregano o 1/2 teaspoon cumin o 1/2 teaspoon salt o 1/8 teaspoon cayenne pepper o 1 tablespoon cider vinegar Directions 1. Saute garlic, onion, & green pepper in oil for about 5 minutes until softened. 2. Add chili powder and cook briefly. 3. Add tomato, seasonings, and vinegar; cover & cook for 20 minutes until vegetables are tender. 4. Uncover and cook 10 minutes longer. 5. Puree in the blender or mash with a fork. http://www.food.com/recipe/enchilada-sauce-287875 I know chili powder by american definition is hard to find, but its mostly just more of the same ingredients (cayenne, garlic, cumin, oregano, salt) I packed my own when I moved here, but its only one and a half teaspoons, so it's not a lot anyhow. After I made the sauce I browned some beef mince with onions and capsicum and mixed it with a can of refried beans I had in the pantry --you could put whatever you want or have on hand in, roll it up in tortillas in a baking pan, cover with sauce sprinkle with some grated tasty cheese and cook for about 40 mins at 180C. |

I whipped up some hummus yesterday, and bought some garlic flatbread (really, it's naan) to go with it. I also had some Weight Watchers tasty cheese. Today I picked up a roast pumpkin spread and some spreadable goat cheese with dill. Om nom. |
