I don't have a fancy mixer but I think I'm going to give these a go... not this week because work is trying to kill me but soon... any tips are appreciated! ~ Indy
I do not use a mixer at all, I mix/knead everything by hand. The biggest thing is the boil! You know the sayin.."If it aint boiled, it aint a bagel!"

:headscratch: Am I the only one here that makes their own bagels? I know Brett&Alison did, as I inherited their boiling pot and oven trays when they moved to Brooklyn :lurve: There's dozens of recipes, and videos on making them, I think they're fun!
I was wondering when someone would ask that... I would have thought more people would make their own as well... Mine turn out just like the ones you get from the street hawker in front of Penn Station...

We just tried the recipe used by The Wendnesday Chef (link up above under Swensons post). Mixed the dough yesterday and baked them up today. Now for our first attempt they did come out looking a bit free form. I guess I need some practice on the flour mixing with yeast, the dough was a bit runny and sticky. We patched them up some this morning before the boiling. What can I say? OMG, they were amazing! We made up a dozen with a variety of onion bagels, sesame bagels, poppy bagels, garlic bagels, salt (yes salt) bagels and the ever popular everything bagels. Matter of fact, for dinner I just had an onion omlette sided by a sesame bagel with cream cheese and lox. This Brooklyn boy was in heaven. You have got to try the recipe out. Easy too!
