Agh! The chilling overnight part! I think THAT is where I went wrong. It just wasn't sticking together, assembling correctly. I wish I lived in Sydney for a party!

Yep - that's the key! That filling needs to be like a rock when it's time to assemble :)

Seriously ladies (and gents if you are lurking), I am going on-line to look at pasta-makers now ans then I truly will have a little peirogi party at my place....

I just read this and was hoping someone had found somewhere to buy pierogies. I am seriously craving them so bad. I tried making them once but it was a complete disaster.
I did however come across this recipe for a mashed potatoe quesadilla which I make quite often to sort of get the taste. Here is the link but I basically just make a pierogi filling, put it between a tortilla, fold it and fry it. Serve with sour cream and sausage, maybe a little salsa sometimes, and it's really delicious.

Those mashed potato quesadillas are pretty freakin' good. Just finished munching on the leftovers. Guess what I did today? I BOUGHT PIEROGIES!! I found them in a store at Southland if any Melbourne people are interested... It's Ivan's International Deli across from Aldi. I'm going to give them a go this weekend and see what they're like. They also have smoked bacon that looks like it's got potential. I didn't get any this time, but I reckon I'll be heading back there again!
