Sour Cream and Chicken Enchiladas; Mexican Food

I bought an expensive bag of Fritos and made a Mexican Seven Layer Salad for a function last week at the hospital where I work, and it lasted seriously about five minutes! I also bought a Pork Shoulder roast and cooked it for eight hours and made a big platter of Pulled Pork Taquitos to go with the salad and they were there one minute and gone the next...LOL! It made me feel proud to have had the opportunity to share some of my Texas heritage with them and provide them with the chance to sample "Real" Tex-Mex food like what you and I are familiar with, and not the crap that attempts to pass for Tex-Mex here!

Could I use diced jalepenos instead of green chilies since I have been unable to locate any.

I just made the enchiladas as well - they were super yum!!

I did half green chillies and half jalepenos and it had a nice kick!

Jalapenos would certianly be an option or even diced Bell Pepper however, if you use the Jalapenos just be sure to rinse them off real good and get rid of all of the seeds.

Well, I made your recipe the other night with jalepenos and I have to say, IT WAS FANTASTIC!! It was similar to the one I normally make but a bit better. I will be sticking to your recipe from now on and I will be on the lookout for some green chiles to see if they make it even better. Thanks.

I sure am pleased that ya'll weren't disappointed with the recipe! And Like I mentioned before, they'll taste better and better every time ya make em! I just love the Sour Cream sauce and, the Green Chilis (When you can find them), will definately make a noticable difference.

This is so yummy!! Used Hoyt's jarred chili's and added waaay too much the first time, like half the jar.

I shared the recipe with friends and they loved it too!! Thanks for sharing :)
